Our Story

Reserve is an intimate expression of hospitality, shaped by everything we have learned through more than a decade at Café Monarch.

Its story began in 2020 with a simple question: How much further could we take the experience?


Fewer guests. More courses. More time. Greater precision.


What began as the Reserve Room within Café Monarch became a place to explore those ideas, to slow the evening down, deepen the relationship between the kitchen and dining room, and create an experience where every detail could be considered. Over time, Reserve became something of its own.

Fittingly, it found its permanent home where our story first began: within the original home of Café Monarch in Old Town Scottsdale. Returning to these walls was more than a homecoming. It was an opportunity to take everything this space had taught us and reimagine what could come next.

Today, Reserve welcomes only a limited number of guests each evening for a multi-course tasting experience led by Executive Chef Benjamin Wald. Each course exists as part of a larger progression, thoughtfully composed, deliberately paced, and designed to unfold over the course of the evening.

Wine is equally fundamental to the experience. Under the direction of Wine Director John Germain, the wine program shared by Reserve and Café Monarch has been built over more than a decade, with pairings selected not simply to accompany each course, but to become part of its story.

At Reserve, luxury is not defined by excess. It is found in time. In restraint. In precision. In knowing when to introduce something unexpected and when to allow a moment to simply exist.

The kitchen, wine, service, music, lighting, pacing, and room itself are considered as one experience. Nothing stands alone, because nothing should feel accidental.

Reserve is connected to where we began, but it was created to look forward. It represents our continued pursuit of what hospitality can become when there are fewer distractions, fewer compromises, and the freedom to obsess over every detail.
